Easter is just around the corner so why not turn your trusty weekend breakfast pancakes into a fun affair that will put a smile on your little one’s face quicker than you can say “breakfast’s ready”. These healthy bunny pancakes have been a winner with our kids (and us grown-ups). They’re super easy to make and only take 5 minutes to whip up, which is important with weekend plans often taking over our mornings. All the ingredients are pantry and fridge staples and will quickly turn this quick-n-easy kids pancake recipe into a favourite with your little ones too. And best of all? This fun version is entirely sugar free. Simply add your favourite fruit and a dollop of yoghurt to add a hint of sweetness and turn these toddler favourites into whatever their heart desires. We love them topped with strawberries, yoghurt and a hint of cocoa. Banana, cinnamon and a tiny squeeze of honey works a treat too. Makes 4-5 large pancakes | Prep 20 minutes ingredients: 3 eggs 250 ml (2 cups) milks 200 g (2 cups) light spelt flour ghee/ coconut oil for baking method: Whisk together the eggs, milks and flour until smooth. Heat a little ghee in a frying pan and scoop in pancake batter. Cook for 2-3 minutes until small bubbles form on the surface of the pancakes. Flip and cook on the opposite sides for 1-2 minutes, or until golden brown. Top with jam or/and yogurt and sprinkle with anything that makes you happy. Notes: Enjoy gluten-free and dairy-free pancakes by using gluten-free flour and non-dairy milk but the eggs are a must.
